Grilled Portabellas with Chicken Salad

Grilled Portabellas with Chicken Salad
1/4 cup fat-free balsamic vinaigrette, divided
2 tsp. Dalmatia Fig Spread (near the gourmet cheese in our Deli)
2 large portabella mushrooms
3 cups mixed baby greens
3/4 cup Hormel Natural Choice Grilled Chicken Strips
2 tbsp. shaved Parmesan cheese (optional)

Prep: 15 minutes, Cook: about 6 to 10 minutes, Serves: 2

1. Stir together vinaigrette and fig spread in a small bowl.

2. Remove stems from mushrooms and grill over medium heat, gill side down, for 3 to 5 minutes. Turn and brush with some of the dressing mixture; grill for 3 to 5 minutes more or until cooked, but still fairly firm. Remove from grill and let cool to warm.

3. Place greens, chicken and remaining vinaigrette mixture in a medium bowl; toss well to coat. Pile mixture into mushrooms and top with shaved Parmesan, if desired.
