Apricot Almond Quinoa Salad

Apricot Almond Quinoa Salad
1-1/3 cups water
1 cup quinoa (bulk bin #723), rinsed in a fine mesh sieve
1/2 cup dried apricots (bulk bin #625), coarsely chopped
1/4 cup sliced green onions
1/4 cup organic extra virgin olive oil
3 tbsp. lemon juice
2 tbsp. honey
2 tbsp. chopped fresh thyme
1/2 tsp. salt
Freshly ground pepper to taste
1/2 cup slivered almonds, toasted

Prep time: 15 minutes, Cook time: 12 minutes
Chill time: at least 1 hour, Serves: 6

Bring water to a boil in a medium saucepan; stir in quinoa. Reduce heat and simmer, covered, for 12 minutes. Remove from heat and let stand for 5 minutes, then fluff with a fork; let cool. Whisk together remaining ingredients except almonds; stir into quinoa. Cover and chill for at least 1 hour. Sprinkle with almonds just before serving.
