Peanut Butter Oat Crisps

Peanut Butter Oat Crisps
1/2 cup organic butter
1/2 cup Wholesome Sweeteners Organic Light Brown Sugar
1/4 cup MaraNatha No Stir Organic Peanut Butter
1 tsp. Simply Organic Vanilla Extract
1-1/2 cups rolled oats (Natural Foods Dept. bulk bin #610)
1/2 cup flour
1/2 tsp. each: baking soda and Simply Organic Cinnamon
1/4 tsp. each Hain Sea Salt and Simply Organic Ginger

Prep time: 20 minutes Cook time: 10 to 14 minutes

Melt butter in a large saucepan over low heat; stir in brown sugar,
peanut butter and extract. Process oats in a blender or food processor
until finely chopped. Add to pan with remaining dry ingredients and stir
until well mixed. Press tightly into a log shape on a piece of waxed
paper; roll up tightly to seal. Refrigerate for several hours or until very
firm. (Dough may be made several days ahead).

Preheat oven to 400°F and line 2 baking sheets with parchment paper.
Cut cookie dough into 1/4-inch slices with a small sharp knife and place
on prepared baking sheets. Bake for 10 to 14 minutes or until lightly
browned on the edges. Let cool on baking sheets.

Makes about 3 dozen cookies.
