Sausage and Bean Stew

Sausage and Bean Stew
1 (19.5- oz.) package sweet or hot Italian turkey sausage
1 large onion, peeled and chopped
3/4 cup thinly sliced and chopped fennel
1 (14.5- oz.) can diced tomatoes with basil, garlic and oregano
2 tsp. Italian herb seasoning
3 (15- oz.) cans small white beans, drained
Shaved or freshly grated Parmesan cheese (optional)

Prep: 10 minutes, Cook: 20 minutes, Serves: 6 to 8

1. Remove casings from sausage and place sausage in a large pot. Break into bite-size pieces with a wooden spoon and cook over medium-high heat, stirring often, for 5 minutes.

2. Add onion and fennel; cook for 5 to 10 minutes or until vegetables are very soft and meat is cooked through.

3. Add tomatoes and seasoning; cook for 5 minutes.

4. Add beans and cook for 5 minutes more. Serve with Parmesan cheese, if desired.

I have made this about 14 times. We all love it, although I do add 2 extra cans of the diced tomatoes. I am making it right now!!!!!!!!

This is probably my favorite recipe from Something Extra. I have been making this soup since the recipe appeared years ago. As others have mentioned, I add an additional can of tomatoes as I felt it was too thick otherwise. This is great soup on a rainy and dreary day and it doesn't take long to make.
