Sweet Potato Swirl

Sweet Potato Swirl
2-1/2 lb. sweet potatoes
2-1/2 lb. yams
3/4 cup orange juice
4 to 6 tbsp. orange juice concentrate
6 tbsp. honey
1/4 cup butter melted
1-1/2 tsp. cinnamon
2 to 3 tbsp. additional orange juice
Prep time: 20 minutes
Cook time: 15 to 20 minutes

Peel sweet potatoes and yams and cut into
chunks. In 2 separate pots, boil sweet potatoes and yams for about 15 minutes or until tender; drain and mash each until very smooth. Blend 3/4 cup orange juice, concentrate, honey, butter and cinnamon; stir half of the mixture into each pot and mix well. Add additional 2 to 3 tbsp. orange juice to sweet potatoes. Place dollops of each mixture into a buttered 9-inch baking pan. Insert a knife into the center and drag through the mixture to create a swirl. Serve immediately.

Makes 8 servings.

HOLIDAY TIP: Spoon hot potatoes into
hollowed orange or lime peel bowls.
