Banana Coffee Loaf Cake
1 cup butter, softened
1 cup sugar
3 ripe bananas, mashed
1 egg
2½ cups flour
1 cup miniature chocolate chips
2 tbsp. espresso coffee beans, ground on "Turkish grind" setting
1½ tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Prep: 15 minutes, Cook: 1 hour,  Makes: 1 loaf

1. Preheat oven to 350°F and spray a 9x5x3-inch loaf pan with nonstick cooking spray. Cream butter and sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy.

2. Beat in bananas and egg. Stir in remaining ingredients and pour batter into prepared pan.

3. Bake for 1 hour or until a toothpick inserted into the center comes out clean, tenting loosely with foil if cake browns too quickly.
