Cloud 9 Rice Pudding

Cloud 9 Rice Pudding
2 cups water
1 1/2 cups short grain rice
4 cups fat-free milk
1/2 cup sugar
1 tbsp. vanilla extract
Light or fat-free whipped topping and fresh fruit

Prep: 5 minutes, Cook: 45 to 50 minutes, Serves: 6

1. Bring water to a boil in a large saucepan; stir in rice. Reduce heat and simmer, covered, for 20 minutes. Remove from heat and let stand, covered, for 10 minutes more.

2. Stir together rice, milk, sugar and vanilla in a large saucepan. Bring to a boil; reduce heat and simmer, uncovered, for 15 to 20 minutes or until very creamy and somewhat thickened. Remove from heat and let cool. (Mixture will thicken more as it cools.)

3. Serve warm with a small dollop of whipped topping and fresh fruit.
