Baked Cod with Bacon Tomato Ragout

Baked Cod with Bacon Tomato Ragout
1 lb. cod fillets
Salt and freshly ground pepper to taste
1 (14.5- oz.) can S&W Ready Cut Italian Recipe Tomatoes, drained
1/4 cup Hormel Real Bacon Bits
2 tbsp. minced shallots
2 tbsp. red wine
1 tsp. herbes de Provence

Prep: 10 minutes, Cook: 15 to 20 minutes, Serves: 4

1. Preheat oven to 350°F and spray a 2-quart casserole dish with nonstick cooking spray.

2. Rinse cod and pat dry with paper towels. Place in prepared dish and season to taste with salt and pepper.

3. Stir together remaining ingredients in a small bowl and pour over cod. Bake for 15 to 20 minutes or until fish flakes easily with a fork.
