French Onion Soup

French Onion Soup
2 tbsp. butter
3 medium yellow onions peeled and thinly sliced
4 cups Kitchen Basics Beef Stock
1/2 cup dry sherry
1 tbsp. Worcestershire sauce
3 slices Rustic French Bread from our bakery halved and lightly toasted
1 cup Jarlsberg cheese shredded
1/4 cup Parmesan cheese shredded
Prep time: 10 minutes
Cook time: 1 hour

Melt butter in a large stockpot. Add onions; cook over
medium heat for about 20 minutes or until very soft,
stirring frequently. Add stock, sherry and
Worcestershire sauce; bring to a boil, then reduce
heat and simmer, covered, for 30 minutes. Season to
taste with salt. Ladle hot soup into ovenproof bowls.
Place one bread slice on top of soup in each bowl and
sprinkle with equal amounts of cheese. Place under
the broiler for 2 to 3 minutes or until cheese is lightly
browned and bubbly.

Makes 6 servings.

One of the best comfort foods you can have on a cold winter day. The more you caramelize the onions the sweeter they will get and the sherry gives the perfect touch. I didn't have all the fancy cheese so I used slices of Monterey Jack and it still turned out great. This is one you gotta try. Even my onion hating friend loved this soup. 5 stars!!!
