Chipotle Gazpacho

Chipotle Gazpacho
2 medium tomatoes
1/2 cup chopped red bell pepper
1/2 cup peeled and chopped cucumber
1/4 cup minced red onion
1/4 cup fresh cilantro leaves
1 (5.5- oz.) can or 2/3 cup tomato juice
1/4 cup Chipotle Salsa
1 tbsp. lime juice
Diced avocado (optional)
Cooked, chilled prawns (optional)

Prep: 15 minutes, Chill: 1 hour, Serves: 2

1. Cut tomatoes in half and squeeze to remove seeds. Chop tomatoes and place in a blender or food processor with bell pepper, cucumber, onion and cilantro. Pulse on and off until vegetables are chopped into small pieces.

2. Remove half the mixture to a bowl. Add tomato juice to blender or food processor and puree until smooth; stir into reserved chopped mixture with salsa and lime juice.

3. Cover and chill for at least 1 hour (may be made several hours ahead.) Top each serving with diced avocado or a few prawns, if you like.
