Brown Rice, Gorgonzola and Dried Cherry Salad

Brown Rice, Gorgonzola and Dried Cherry Salad
2 (8.8- oz.) packages Uncle Ben's Ready Whole Grain Brown Rice
1/2 cup each: crumbled Gorgonzola cheese
1/2 cup dried cherries
1/2 cup green onions
1/2 cup celery
2 tbsp. olive oil
2 tbsp. red wine vinegar
1 tbsp. soy sauce
Freshly ground pepper to taste
1/4 cup walnuts (optional)
Prep: 10 minutes, Cook: 2 minutes, Serves: 4 to 6

1. Cook rice according to package directions; transfer to a
medium bowl. Stir in
cheese, cherries, green onions and celery.

2. In a small bowl, whisk together oil, vinegar, soy sauce
and freshly ground
pepper to taste. Drizzle over rice mixture, stirring well to
coat. Top with walnuts,
if you like.

This salad is delicious, easy to make. We like it better without the Gorgonzola cheese, but may have added to much. Also tried the brown rice salad with fresh ripe pears. It is also really good. I used balsamic vinegar and olive oil dressing.I also used toasted sliced almonds instead of the walnuts, but either would be good.
