Brown Rice, Gorgonzola and Dried Cherry Salad

Brown Rice, Gorgonzola and Dried Cherry Salad
2 (8.8- oz.) packages Uncle Ben's Ready Whole Grain Brown Rice
1/2 cup each: crumbled Gorgonzola cheese
1/2 cup dried cherries
1/2 cup green onions
1/2 cup celery
2 tbsp. olive oil
2 tbsp. red wine vinegar
1 tbsp. soy sauce
Freshly ground pepper to taste
1/4 cup walnuts (optional)
Prep: 10 minutes, Cook: 2 minutes, Serves: 4 to 6

1. Cook rice according to package directions; transfer to a
medium bowl. Stir in
cheese, cherries, green onions and celery.

2. In a small bowl, whisk together oil, vinegar, soy sauce
and freshly ground
pepper to taste. Drizzle over rice mixture, stirring well to
coat. Top with walnuts,
if you like.
