Red Chili Beef with Beans

Red Chili Beef with Beans
1 tbsp. vegetable oil
1 lb. Raley's Beef boneless California raised USDA choice cut in to 3/4 -inch cubes
1 large onion coarsely chopped
1 (14 oz.) can Hatch Red Enchilada Sauce
3 cups white rice hot, cooked
1 (16 oz.) can Raley's Pinto Beans rinsed and drained
1 (4 oz.) can MP Diced Green Chiles

Prep time: 15 minutes Cook time: about 2 hours 15 minutes

Heat oil in a large skillet with a tight-fitting lid. Add beef and cook over
medium-high heat until browned on all sides. Add onion and cook for
5 minutes more. Stir in enchilada sauce and bring to a boil.

Reduce heat and simmer, covered, for 1½ hours or until beef is very
tender. Remove 1/3 cup sauce and stir into rice. Stir beans and chiles
into skillet and cook for a few minutes more to heat through. Serve
over rice, if you like.

Makes 4 servings.
