Ellie Krieger's Walnut Energy Bars
1 cup quick oats
1/2 cup raw, unsalted sunflower seeds (Natural Foods Dept. bulk bin #638)
1/2 cup wheat germ
1/2 cup each: California walnuts, dried apricots, raisins and pitted dates
1/2 cup powdered nonfat dry milk
1/4 cup whole wheat pastry flour (in our Natural Foods Dept.)
1/2 tsp. cinnamon
1/3 cup pure maple syrup
2 ea eggs
Prep time: 10 minutes,
Cook time: about 20 minutes

Preheat oven to 350°F and coat a 13 X 9-inch baking pan with nonstick cooking
spray. Place all ingredients except syrup and eggs in a food processor and
pulse until all ingredients are finely chopped. Add syrup and eggs; pulse until
mixture resembles a coarse paste. Spread evenly into prepared baking pan and
bake for about 20 minutes or until lightly browned around the edges. Cut into
squares and store in an airtight container in the refrigerator for up to 1 week.

Makes 20 squares.

These are great. I added 1/3 c natural peanut butter and 1/2 c multi grain cheerios. perrrrfect.

I was very disappointed. First of all, trying to spread them out into a 9x13 pan is no easy task and they are too thin, so I made them into an 8x8 size. 20 minutes was too long of a baking time and mine almost burnt. Imagine if I had spread them out like the recipe said, they'd be in the garbage. The taste was just so-so.
