Bayou Crab Cakes

Bayou Crab Cakes
1 (6- oz.) container crab meat
1-1/3 cups panko breadcrumbs, divided
2-1/2 tbsp. mayonnaise
2-1/2 tbsp. minced red bell pepper
1 tbsp. minced green onion
1 tsp. lemon juice
1/4 tsp. Tabasco sauce
1 egg
1/4 cup flour
2 eggs, beaten
Vegetable oil (for frying)

Recipe may be doubled.

Prep: 15 minutes, Cook: 10 minutes, Makes: 8

1. Squeeze out as much liquid as possible from the crab and place in a medium bowl with 1/2 cup breadcrumbs, mayonnaise, red pepper, onion, lemon juice, Tabasco and 1 egg. Shape into 8 patties.

2. Dip each in flour, then beaten eggs, then remaining breadcrumbs. Fry in 1-inch of hot oil for about 3 to 4 minutes per side. Drain on paper towels and serve immediately.

Best crab cakes ever. Took them to a pot luck and had people from Boston there and they loved them! Said they were a little skeptical when they saw them, but it was love at firt bite!

-use 1 TBS miracle whip lite + 1 1/2 TBS fat free sour cream for mayo -1 tsp dill weed -2 TBS finely chopped celery -use egg beaters for dipping -use just enough oil to cover bottom of pan; no swimming!
