Ultimate Stuffed Potato Skins
8 Russet Potatoes
1½ tbsp. oil
1 cup salsa
2/3 cup sliced ripe olives
1/2 cup cooked and crumbled bacon
1⅓ cups shredded pepper Jack cheese
1/2 cup sliced green onions

Prep: 15 minutes, Cook: 45 minutes, Serves: 8

1. Pierce potatoes and microwave on HIGH for 12 minutes or until soft when gently squeezed. Cut in half and scoop out insides, leaving a 1/4-inch rim of potato inside skin. Place on a baking sheet and coat liberally with olive oil cooking spray. Bake at 400°F for 20 minutes or until very crispy.

2. Fill skins with salsa, cheese, olives and bacon. Bake for 10 minutes more, then sprinkle with green onions.

Something seemed to be missing! They were okay, I ended up dipping them in Hidden Valley Ranch dressing!

I have made potato skins before and when they are roasting for 20 minutes with the oil I sprinkle the potatoes with the Roasted Herb and Garlic seasoning and salt and pepper. It gives the potato flavor. Then add the rest and continue on baking...Flavor is wonderful
