Jalapeno Cheese Egg Cups

Jalapeno Cheese Egg Cups
4 jalapeño cheese rolls (in our Bakery)
4 eggs, beaten
1 tbsp. butter
1/2 cup shredded Mexican blend cheese
1/2 tsp. Mexican seasoning blend
1/2 tsp. garlic salt
1 avocado, peeled, pitted and chopped
1 (4.5- oz.) package Frontera Original Guacamole Mix, divided

Prep: 10 minutes, Cook: 20 minutes, Serves: 4 

1. Preheat oven to 400°F. Cut a circle from the top of each roll and scoop out some of the insides. Place rolls on a foil-lined baking sheet.

2. Cook eggs in butter in a medium skillet until starting to set. Stir in cheese, seasonings, avocado and 3 tbsp. guacamole mix.

3. Spoon into rolls and bake for 10 minutes or until eggs are set. Serve with remaining guacamole mix.
