Lord of the Onion Rings

Lord of the Onion Rings
1-1/4 lbs. yellow onions (2 large)
2 cups panko bread crumbs
1/2 cup very finely chopped pecans
1 cup flour
2 tsp. garlic salt
2 tsp. seasoned salt
3 eggs
Vegetable oil for frying
Freshly ground pepper to taste

Prep: 1 hour, Stand time: 1 hour total, Cook: 30 minutes total, Serves: 8

1. Cut onions into 1/2-inch thick rings and place in a large resealable bag with buttermilk. Seal well and let stand for 1 hour, turning bag occasionally. Remove from buttermilk.

2. While onions are marinating, stir together breadcrumbs and pecans in a large bowl. Stir together flour and salt in another medium bowl. Beat eggs well in another small bowl.

3. Dip each onion ring into flour and place on a baking sheet. Dip in egg, then breadcrumbs; place in a single layer and let stand for 30 minutes.

4. Fry several at a time in hot oil for a few minutes on each side until golden brown. Remove and drain on paper towels. Sprinkle with pepper and serve. (May be made several hours in advance and warmed in a 400°F oven when ready to serve.)
