BBQ Portabella Burgers with Jalapeno Lime Slaw

BBQ Portabella Burgers with Jalapeno Lime Slaw
1 small head fresh cabbage
2 medium carrots
1 jalapeno, seeds removed and chopped
1/2 cup chopped cilantro
2 tbsp. lime juice
2 tbsp. white wine vinegar
1/4 cup olive oil
2 tsp. agave nectar
Salt and pepper

4 portabella mushrooms, stems removed
2 tsp. olive oil
Salt and pepper to taste
4 Tbsp. barbecue sauce
4 slices smoked provolone
4 burger buns, toasted

Prep: 15 minutes, Cook: about 8 minutes, Serves: 4

1. Preheat oven broiler. To prepare slaw, core and slice cabbage into thin strips. Peel carrot into thin strips and add to cabbage with chopped jalapeño. Toss in remaining slaw ingredients until blended and set aside.

2. Clean and slice mushrooms into thick strips. Heat oil in a large skillet over medium heat and sauté mushrooms about 5 minutes or until soft. Stir in barbecue sauce and season with salt and pepper. Top buns with mushrooms and place a slice of cheese on each. Broil mushroom burgers for 3 minutes or until cheese is melted. Top with slaw and bun tops and serve.
